A fresh mozzarella and tomato salad!
See that big beauty in the middle? That is an heirloom Brandywine tomato. That’s the one I’ll use along with some of the basil from my garden. You need:
1 tomato, small ball of FRESH mozzarella cheese, 2-3 fresh basil leaves, virgin olive oil and balsamic vinegar.
Cut the tomato into slices and cut an equal amount of thin sliced cheese. Then chop the fresh basil leaves.
Layer the cheese and tomato slices on a plate. Sprinkle with salt and pepper to taste. Drizzle on olive oil and vinegar, then sprinkle the basil on the top. Voila!
