Fried Green Tomatoes

It’s the time of year that those tomato vines are starting to die and there are still tomatoes growing.20141028_084255 20141028_084249

Sometimes they’ll ripen in the window sill, and sometimes they are pickled or fried – Here is a great fried recipe my mom taught me!

Fried Green Tomatoes

  • 4-5 medium to large green tomatoes
  • 1 egg
  • 1/8 cup of water
  • 1/8 teaspoon lemon pepper
  • ½ teaspoon garlic salt
  • 1 cup panko
  • ¼ grated parmesan (not the canned)
  • 1 Tablespoon butter
  • 1-2 Tablespoons olive oil

Slice the tomatoes about ¼ – ½ inch thick.  Mix the egg and the water and coat each tomato slice with the mixture.

Mix the panko, garlic salt, pepper and parmesan.  Coat each slice on both sides with the mixture. 20141027_173123

Melt the butter in a skillet and heat with the olive oil.  Carefully add each slice, cooking until the tomato is soft and the outside is browned. 20141027_175628xx

Serve hot!
