Fresh Lettuce and Raspberry Salad

Remember the lettuce in the wheelbarrow?  Are you ready to use it? rasp salad   Add some fresh raspberries!!  Yep – I stopped to buy more strawberries at the Boones Ferry Berry Farm and they had baskets of fresh, ripe and juice red raspberries!  If you do the U-pick there were also golden raspberries along with several other varieties. Mix fresh baby salad greens tossed gently with fresh raspberries.  Dress it with store bought raspberry vinaigrette or use some of the strawberry syrup from the pancake recipe – here’s how:

  • 6 T homemade strawberry syrup
  • 2 Tablespoons balsamic vinegar
  • 2 Tablespoons olive oil
  • a tiny Pinch of salt

Whisk it until it’s thick and blended!  Should make enough for four small salads! Boy do I love summer!!
